Today was another great day of vegan eats!

 

 

 

 

 

 

Breakfast

 

 

 

 

 

Breakfast consisted of two pieces of toasted Trader Joe’s sprouted wheat bread topped with 1/2 of a mashed avocado and salsa and one sliced organic golden delicious apple.  Apparently I let my avocado ripen a bit too much (hence the slightly brownish hue), but it still tasted delish!  Also, has anyone ever noticed how much better organic fruits taste?  This apple was seriously juicy and delicious.

Mid-morning I ate a banana- my go-to morning snack!

Lunch

 

 

 

 

 

Today’s lunch was made up of an eggless salad sandwich (2 pieces of toasted organic Ezekiel sprouted 100% whole grain bread, Happy Herbivore’s eggless salad, lettuce, and onions) and cooked green peas.  Talk about a protein-rich meal: 20 grams 🙂

On my lunch break at work I snacked on some baby carrots, a few crackers, and a blueberry muffin Larabar.

Dinner

 

 

 

 

 

It must be a Happy Herbivore kind of day, because I used another one of her recipes for dinner.  Tonight I made Cauliflower Pumpkin Curry (to which I also added chickpeas) and served it over whole brown rice.  It was spicy, pumpkiny (yum!), and oh-so delicious!  I will definitely make this again.

My late-night snack(s) will likely consist of fresh strawberries and raspberries and possibly some kettle-corn popcorn.

Today’s eats definitely prove that vegans eat delicious food! 🙂

    I have yet to find a way to cook cauliflower where I enjoy the taste! Mixing it with pumpkin curry, though, sounds amazing. Do you think it would still be good without the curry since I'm not a spicy fan?

      I think it is definitely worth trying without the curry. Or you might use a lesser amount. It calls for 2 tsp of curry powder so you might only try 1/2 -1 tsp to make it less spicy.

    Strange comment but I loveee peas [my momma said they were my fave as a child] :D And that cauliflower sounds great, I love it simply roasted!

      That's not weird at all! Peas are definitely in a close third place for me behind carrots and sweet potatoes for my favorite vegetable. I love them! :)
