It is that time of the week again…time for “What I Ate Wednesday” :)!

Breakfast consisted of 2 pieces of toasted Ezekiel sprouted 7-grain bread (one with 1/2 an avocado and salsa and the other with natural peanut butter and  a dash of cinnamon).  On the side I had a sliced Gala apple.

A change-up from the usual…I did not (I repeat, did not) eat a banana today!  They were way too green so I wasn’t even going to bother with a nasty, unripened banana :(.


On my lunch break at work today I ate leftover Vegetable Korma with whole brown rice from the Happy Herbivore Abroad cookbook.  This cookbook just came out and I was SO excited to get it! (P.s. be on the lookout for a giveaway of this cookbook later this month! ;)).

Tonight’s dinner was spaghetti made from whole wheat noodles, light traditional pasta sauce (with added diced tomatoes and chopped onions), and a dash of nutritional yeast.  On the side I enjoyed green beans and unsweetened apple sauce.  It was a tasty meal!


Tonight’s snacks will likely consist of some sort of vegetable, fresh strawberries and blueberries, and possibly some microwave kettle corn popcorn.

Blog Hiatus

Just for the heads up, I will be traveling the next couple of days and will be very busy.  Therefore, you likely will not see a blog update until Sunday or Monday night.  Catch ya then! :)
