Grilled Peanut Butter and Jelly Sandwich

I have been totally crushing on peanut butter and jelly sandwiches, lately.  I went through a span of several years where I do not think that I picked up a single PB & J sandwich.  But over the past month I have brought an old childhood favorite back into my life.  In fact, eating a PB & J sandwich has become somewhat of a weekly ritual around here.  I just cannot get enough!  That might be a result of my obsession with peanut butter, but who really knows? 😉

After making and eating the most delicious grilled cheese, I suddenly had the urge to “grill” my new (but old) favorite sandwich.  So, I did it.  I made a Grilled Peanut Butter and Jelly Sandwich.

Grilled Peanut Butter and Jelly Sandwich

Servings: 1

Ingredients

EVOO cooking spray
2 pieces 100% whole wheat bread
1-2 TB coconut oil (or butter or margarine)*
2 TB natural peanut butter
2 TB grape jelly (I used low-sugar)

*I highly recommend using coconut oil, as it is healthier and results in perfectly crispy, golden brown bread.

Directions

1. Heat a small saute pan over medium heat.  Spray the pan with EVOO cooking spray to prevent the sandwich from sticking.

2. Spread one side of each piece of bread with coconut oil.

3. Spread the second side of the first piece of bread with peanut butter.  Spread the second side of the second piece of bread with jelly.

4. Place the coconut oil side of one of the pieces of bread into the skillet.  Top this piece of bread with the remaining piece of bread with the coconut oil side up.

5. Cook the sandwich for several minutes, or until the bottom piece of bread is golden brown.  Flip the sandwich and cook the second side for a couple more minutes.  Once both sides of the sandwich are toasted and golden brown, the sandwich is ready!

6. Cut the sandwich in half, if desired.  I, of course, cut my Grilled Peanut Butter and Jelly Sandwich on a diagonal! 😉

A Grilled Peanut Butter and Jelly Sandwich tastes absolutely perfect paired up with a side of apple slices.  I dipped my apple slices in some of the melted peanut butter that escaped from the sandwich.

If you are a peanut butter and jelly sandwich fan, then I can almost guarantee that you will love this grilled version.  Due to the heat, the peanut butter got incredibly warm, melty, and delicious.  It was really good and I must say that this version of a PB & J just might be even better than the original version.  I mean who doesn’t love toasted bread and melted peanut butter?  It is the perfect combination!

The Grilled Peanut Butter and Jelly Sandwich would be perfect for breakfast, lunch, or as a snack.  You could also changes things up a bit by using almond butter and/or your favorite flavor of jelly or jam, or by adding fresh fruit, like apple slices, blueberries, or raspberries.  I am definitely thinking about trying to make this with pumpkin butter, as well…go figure ;).

Now go make this sandwich and enjoy a new spin on an old favorite!

    I went years without ever thinking about PB&J, too. I have no clue why because it really is the best thing ever! ;) I've never had it grilled. It's on my list!

    Yum! I'll have to try grilling a pbj next time I'm home during lunch hours. I totally went through the same type of phase where I went years without pbjs but now like them again.

    Oh my heavens!! This may be the best thing I've seen all day! I love melted peanut butter, especially on toasty bread! Another one of my favorites is peanut butter + honey + banana. I love sandwiching that combination between waffles and making a wafflewich! Happy Monday, love! <3

    Oh yumm! I loved any type of grilled PB sandwiches. When we were in NYC we went to the PB&Co Sandwich Shop and I had the best grilled maple PB, honey and banana sandwich.

    I grew up on PBJ too, but have very rarely eaten them as an adult. The past few days I've been eating grilled sharp cheddar and tomato sandwiches (I sprinkle garlic salt and dried parsley on the butter sides), and I started wondering if grilled PBJ would be good. Thanks to your recommendation that might be dinner tonight! I'm trying to decide whether to sprinkle cinnamon on the outside, inside, or both.
