What Vegans Eat: A Week of Vegan Eats

Today is day #4 of my vegan eats and I am now more than halfway through the week.  I am feeling great about the food that I have been eating, and today I even ate out at a non-vegan restaurant  as a vegan.  I am here to tell you that it is possible, people! 🙂

Day #4: Wednesday, March 27, 2013

Breakfast

I needed to use up the other half of my avocado from Monday’s breakfast, so I made another plate of avocado smothered whole wheat toast, and topped each slice with salsa and nutritional yeast.

I paired my avocado toast with a big bowl of fresh fruit: 1 mandarin orange, green grapes, strawberries, blackberries, blueberries, and raspberries.

Mid-morning I ate a banana.  I figured I would spare you the picture for today ;).

Lunch

For lunch, several of my co-workers and I went to a Mexican restaurant called La Mesa.  I ordered the guacamole salad (minus the cheese), which consisted of Romaine lettuce, tomatoes, and a heaping spoonful of guacamole.  I also ate plenty of chips with salsa!  Sorry for the lack of pictures, but I was seriously so hungry and excited for the food that I forgot to take any!

Snack

On my way to the gym I snacked on a Zone Perfect Perfectly Simple Cranberry Almond protein bar.

Dinner

Dinner consisted of leftover Creamy Mushroom Barley from The Happy Herbivore Abroad cookbook.  You guys…this dish is seriously SO good.  You must try it!

Snacks

My evening snacks included a veggie plate consisting of peas, celery, carrots, and hummus…

…and some Bruschetta lentil chips.  I cannot get enough of these things.  If you have never tried lentil chips, you really should.  Not only are they delicious, but they contain a pretty good amount of protein as compared to other “chips.”  Plus, you cannot beat getting to eat 31 chips for only 130 calories.  Now that is my kind of snack!

    I am vegetarian too and have thought about vegan for a while now. I go back and forth on the topic with my friend lol. Sometimes I think some of my allergies could be from dairy. I should attempt a week of vegan eats as well. It wouldn't be all that difficult for me, except for the eating out part. But you did well eating out today! I could definitely be vegan at home but I just can't give up my favorite desserts when out. Just cant!

      You might try adapting a vegan diet for most or part of the week, and then eat vegetarian for several days out of the week so that you can still enjoy your desserts out at restaurants. That seems to work for me!

    I haven't heard of Bruschetta lentil chips - that sounds delicious. Also, your fruit salad looks so fresh and yummy!

      Lentil chips are awesome and that flavor is delicious. It is the first time that I had tried them, but I will definitely be purchasing them again :).

    OMGGGGGGGGGg Bruschetta lentil chips?? I love regular lentil chips haha, but bruschetta?? Those sound absolutely amazing and I must find some immediately!

      The lentil chips are awesome. The brand is Simply 7 and I actually found them at TJ Maxx, of all places!

    I love barley! Seriously it is the best. My bf eats it for breakfast for 10 years or so, he says it leaves him satisfied and energetic for long. Beautiful eats, btw ;)

    I've never heard of lentil chips, but they kind of look like fritos... although I'm sure much healthier! ;)

      They DO kind of look like fritos! But they definitely do not taste like them. Even still, they are super tasty. You should absolutely try them.

    I've tried lentil chip but not that kind. I'll have to look out for the kind you have. I didn't realize Zone bars were vegan? That's good news bc I love them. Happy Friday!

      I found these particular lentil chips at TJ Maxx, of all places ;). I am not sure if all Zone Perfect bars are vegan (in fact, I am certain that they are not), but the Perfectly Simple bars are.

    Mexican restaurants are definitely the best bet for eating out as a vegan!

      My salad was absolutely delicious and all that I had to do was ask for it without the cheese. So, so easy!

    Sounds like it's going well so far! I'm so happy to hear you've been feeling great and loving the food you're eating! I eat mostly vegan (except for turkey/chicken), so not vegan at all, since I consume those, but I eat no other animals/animal products haha. That's what I meant by that whole spiel ;) I've never had lentil chips! Sounds interesting! Happy Friday!

    Avocado toast has been a recent 'discovery' for me. I think this nooch addition, but I have honestly been making it sweet, with honey and cinnamon. Deliciously weird.

      I would never think to combine avocado, honey, and cinnamon but it sound like it could be a seriously great combination. I will have to try it, but likely with agave nectar!

    I haven't seen that flavor Zone Perfect bar. I tried a peanut butter one and really wasn't a fan but I think I might like that one!

      The Perfectly Simple ones are MUCH better than any other Zone Perfect bars that I have tried. Plus, the ingredients list is WAY better!
