WIAW: May 29, 2013…on Thursday!

in Other

So, it may be Thursday and not Wednesday…but, better late than never, right? 😉

WIAW June

I am not sure how “sensible” my snacking was yesterday, but let’s just go with it!  It’s What I Ate Wednesday (on Thursday) time!

Breakfast

WIAW 52913

I brought my breakfast along with me to work yesterday.  Into the bowl went Kashi Go Lean cereal, Arrowhead Mills Puffed Corn cereal, and Multigrain Cheerios cereal.  I added unsweetened vanilla almond milk when I was ready to eat.

Mid-Morning Snack

WIAW 52213

A couple of hours later, this happened.

Lunch

tofu veggie lettuce wraps 7

Yesterday’s lunch was leftovers from Tuesday night’s dinner.  I enjoyed Tofu and Veggie Lettuce Wraps, which by the way, were super good!  Look for the recipe in a future Magazine Monday post!

WIAW 52913 2

I also ate a Red Delicious apple.

Afternoon Snack

WIAW 51513 2

I snacked on a Perfectly Simple Peanut Crunch protein bar on my drive to the gym.

Dinner

My Indian-themed dinner came straight out of the Happy Herbivore Abroad cookbook.

WIAW 52913 3

I made Masoor Dal (red lentil dal)…

WIAW 52913 4

…and saag (that’s spinach!).

They may not look pretty, but trust me, looks are most definitely deceiving in this instance.  And for those of you who are always concerned about my protein intake on a vegetarian/vegan diet…this dinner alone contained 25 grams of protein! 🙂

Evening Snacks

Last night I snacked on:

WIAW 52913 5

A veggie plate of celery, radishes, carrots, and peas, which I dipped in this:

WIAW 52913 6

Trader Joe’s horseradish hummus.  Seriously, you guys, this stuff is awesome!  TJ’s has the best hummus flavors!

I also snacked on some fresh cantaloupe (my first “homegrown” cantaloupe of the season! yay!) and red grapes (unpictured)…

…and some air-popped popcorn.

All in all it was a great day of eats! 🙂

Ahh I want to try TJs hummus sooo bad! Why is there no TJs around me?? That Indian food looks delicious! I would love to go to India just to try their food ;)

I feel so sorry for everyone out there who does not live near a TJ's. I didn't live near one until about 6 months ago..now I don't know what I would do without it!
  • Her Happy Balance May 30, 2013, 7:59 am
I love Indian food so your dinner sounds amazing. Also, why do I never think to use lettuce for a wrap? I pretty much gave up on wraps once I figured out how many carbs are in them, I need to go back with your healthy version. And did I read you correctly? You grew your own cantaloupe?! How cool is that!
    • cleaneatingveggiegirl May 30, 2013, 2:43 pm
I just started using the hearts of Romaine to make lettuce wraps and I am loving them! You should definitely try it! And I guess I should clarify...no, I did not grow it, but it was homegrown locally...oops, I should have been more specific! ;)

I love air popped popcorn, and your dinner looks so stinkin good! I think you had a great day of food and snacks, they all look pretty darn tasty!
  • Kelly @ Hidden Fruits and Veggies May 30, 2013, 8:28 am
Woah, horseradish hummus?! WHY IS THERE NOT A TJS HERE? Okay. Done yelling :) Saag is one of my favorite Indian foods, I love it with mushrooms, yum yum
    • cleaneatingveggiegirl May 30, 2013, 2:45 pm
Yes, I was a bit nervous to try the horseradish hummus, but I am HOOKED. I feel bad that you don't have a TJ's near you :(. I made the saag about a month ago with mushrooms and red peppers added in and it was so good!

  • jumpeatrun May 30, 2013, 9:37 am
That was one of my favorite hummus's from TJ's. I miss TJ's so much since moving to Denver (don't worry- they are building one now!)...I get sad when i see people posting products from there. haha
    • cleaneatingveggiegirl May 30, 2013, 2:46 pm
I would definitely be going through withdrawals if I were you. Thank goodness they are building one!
  • megbek May 30, 2013, 10:22 am

I hope it does too, for your sake! It is so good! I also love their tomato basil flavor and their chipotle flavor!
  • Dana @ Conscious Kitchen Blog May 30, 2013, 11:28 am

  • cookingfortheotherhalf May 30, 2013, 12:32 pm

  • Michelle @ Eat Move Balance May 30, 2013, 1:46 pm
That horseradish hummus is my all-time favorite! And it's been too long since I've made lettuce wraps!
    • cleaneatingveggiegirl May 30, 2013, 2:48 pm
Lettuce wraps are so simple that I often forget about them, but I am definitely on a kick with them right now.
  • Anna Smith-James (@AnnaTheApple88) May 30, 2013, 3:32 pm
Loving the Indian meals! Can you post the recipe? I love Indian food, the slices are just incredible. Horseradish hummus? That sounds crazy! But strangely tasty... And yay for popcorn snackage! :)
    • cleaneatingveggiegirl May 30, 2013, 4:48 pm
I actually don't post recipes when they are published in cookbooks and I follow them word for word :(. Sorry! And the horseradish hummus = amazing!!
  • P May 30, 2013, 4:39 pm

  • Eating 4 Balance May 30, 2013, 6:19 pm
Homegrown cantaloupe as in grown from your own home?!! That would be awesome! I think you had an awesome day of healthy snacking! Just the peas alone deserve an A++ Those are one of the few vegetables I tolerate now so I eat them literally ALL the TIME :)
    • cleaneatingveggiegirl May 30, 2013, 7:57 pm
Haha, I definitely should have clarified on the cantaloupe..."homegrown" as in grown locally. You aren't the only one who was confused! ;) And yay for peas! They are the best :).
  • Rach @ This Italian Family May 30, 2013, 6:35 pm
I don't eat much Indian food, but you are inspiring me to try it out!
  • Kori May 30, 2013, 7:44 pm
So much of my favorite food is not so cute - especially Indian food! But carrots on the other hand...those are always adorable.
  • Jan @ Sprouts n Squats May 30, 2013, 10:49 pm

  • jessiebearwhat May 30, 2013, 11:39 pm
TJs totally does have the BEST hummus flavors.
  • Sara @ Nourish and Flourish May 31, 2013, 1:35 am
Yum to everything! Even though you posted a day late, this WIAW is more authentic than any others because it's a collection of what you *really* ate on Wednesday, rather than Tuesday. So in that sense, you're not late at all! I'd love to try TJ's horseradish hummus! How spicy is it? xoxo <3
    • cleaneatingveggiegirl May 31, 2013, 1:06 pm
Haha, such a good point!! I definitely try to post what I actually ate on Wednesday, though that often leaves me a bit behind most other bloggers. The horseradish hummus is really good. I was afraid that it would be too spicy, but I really did not think that it was at all. You should definitely try it!
  • Meredith May 31, 2013, 6:30 am
Lettuce wraps for lunch? Yum! You are amazing! I also love ending the day with air popped popcorn. Such a great snack!
  • Nicole @ FruitnFitness May 31, 2013, 7:02 am
I will have to try that flavor hummus. I go through hummus like crazy and always love trying new flavors. I love Indian food and lentils, both of which almost never look good.
    • cleaneatingveggiegirl May 31, 2013, 1:07 pm
Yes, you MUST try it! It is SO good! And you are right, lentils rarely ever look good. But they sure taste amazing!
  • swissfitchick May 31, 2013, 7:24 am
Oh yumm that Indian dinner!! I love red lentil dal!!
