WIAW: June 5, 2013…Mostly…

in Other

Happy Wednesday, all!!  Is it just me, or is this week draaaaaging on and on?  I have been pretty busy at work, but it still seems to be slow-moving.  But we only have two more days left in the work week, so let’s focus on the greatness of that!  Oh, and how about we also focus on some good eats?  It is time for What I Ate Wednesday…or mostly what I ate today.

P.s. Get ready for some veggie overload! 😉

Breakfast

This is exactly why I included the word “mostly” in the title of this post.  I actually brought a bowl of cereal and almond milk to work, but you’ve seen that plenty of times.  So instead, I am going to share with you a picture of an absolutely delicious breakfast that I ate earlier this week.  I had two pieces of toasted 100% whole wheat bread, which I topped with a white bean spread (leftover from a recipe to come in the future), smashed avocado, sea salt, and blackberry jam.  Oh man, this was GOOD!  This is sweet and savory at its finest.

Yuuup..nice and spotty!

Lunch

TJs tuesday 2 3y

For today’s lunch, I brought along leftovers from Monday night’s dinner:  A superfood pilaf from Trader Joe’s, which I added broccoli slaw to, and a side of roasted French yellow beans.

Afternoon Snack

WIAW 6513 5

My after work snack consisted of a bowl of roasted eggplant, zucchini, and kobucha squash.  I have been reading about kobucha squash on food blogs for months now and this was the first time that I tried it myself.  Boy, have I been missing out.  I am now hooked!

Dinner

WIAW 6513 4

Tonight’s dinner was two plates of this: think brown rice, cauliflower rice, broccoli, carrots, onions, kale, Bragg’s, and Dijon mustard (look for more info on this dish in a future post, too!).

Evening Snacks

Welp…I have not actually eaten any snacks yet.  But I foresee a veggie and hummus plate, fresh fruit, and air-popped popcorn in my future.

Veggies much?  What can I say, I crave them!  Not a bad thing to crave, am I right? 😉

Isn't that squash the best! I love it after it has been roasted and refrigerated, I don't know why but I think the flavor is stronger when it's cold.

That dinner dish looks so yummy! I will totally look out for a recipe!

Next Friday I will feature it in my "Friday Favorites" post. I only slightly adapted in from a recipe found on another blog!

Love Kabocha squash! I just finished off the last of mine today :-( So sad! I like my bananas to be spotty too. Not too spotty, just before they reach the overripe point but definitely not green!

You eat such a great variety of veggies! It's inspiring! You have me really curious about combining a bean spread, avocado, & jam together.... I LOVE sweet & savory combos & I never met a sandwich I didn't like...;) I am nut for popcorn. Best snack EVER - with or without a movie!

I was LOVING the breakfast toast, and all thanks to having that leftover bean spread. I try my best to get creative with my leftovers!

Your breakfast sounds so good! I love sweet and savory combinations but I still haven't tried avocado on toast...I'll definitely have to try it with a sweet touch.

Love roasted squash...even better with peanut butter!
    • cleaneatingveggiegirl June 6, 2013, 1:27 pm
I haven't tried the roasted squash with PB, but I love sweet potatoes with it, so I imagine it is awesome with squash, too!
  • swissfitchick June 6, 2013, 3:07 am
I would love to try Kabocha squash but we don't have it since it is out of season! And white bean spread? That sounds delicious!! As does your breakfast - gotta love sweet and savory combos!
    • cleaneatingveggiegirl June 6, 2013, 1:28 pm
Sweet and savory combos are the best! And I hope that you can try kabocha soon because it is SO good!

Yum breakfast earlier in the week looked tasty! As did that dinner :)
  • Ashley June 6, 2013, 6:18 am
Isn't kobucha squash the best?! I love it!!! We roast it, mash it up, and make bruschetta out of it. So good!
  • The Candid RD June 6, 2013, 6:18 am
I love your creative use of veggies!! I too have heard about kobucha, EVERYWHERE, but I still haven't seen them in supermarkets. I wonder if they are only in certain areas of the US? I'm not sure, but I really want to experience this deliciousness.
  • Erica @ For the Sake of Cake June 6, 2013, 6:33 am
I'd never think to combine avocado with jam, but that actually sounds really good!
  • Kelly @ HIdden Fruits and Veggies June 6, 2013, 6:34 am
I'm all for sweet and savory, but I'm not sure how I feel about your toast. I'd say I'll try it at least once, but avocados rarely make it into any type of recipe... I just pop the pieces in my mouth as I cut it up. It's a bad, delicious habit :)
  • Eating 4 Balance June 6, 2013, 7:23 am
Glad you are loving kabocha squash now! SO good :) That breakfast sounds amazing. You are taking the sweet/savory combo to a whole new level!
  • Julia June 6, 2013, 7:44 am
I'm feeling the week drag on too, but we're past hump day and on the downward side of it, so that's a positive thing. Your Wednesday eats look fabulous! I have never tried roasted kobucha, so I'm needing to get on this!
  • jumpeatrun June 6, 2013, 7:51 am
Those meals (as usual) look so delicious and unique. That breakfast sounds awesome in a way I would never think of. You are the best at combining the sweet and savory (you should publish a cookbook with this theme :) )
  • Marie @ Little Kitchie June 6, 2013, 8:02 am
That breakfast looks SO delicious! I have avocado toast most mornings, so I love seeing a new twist that I never would have thought of! Will be copying this ASAP!
  • Erin June 6, 2013, 8:19 am

  • blonde hair blue eyed runner June 6, 2013, 9:26 am
That breakfast sounds so random but so delicious at the same time! I wish I craved veggies more. Maybe I do, but then I eat chocolate instead. I really need to try harder, you are amazing!
    • cleaneatingveggiegirl June 6, 2013, 1:57 pm
My taste buds have changed dramatically since I started eating healthier. Trust me, I rarely ever craved veggies before.
