Spicy Tortilla Chip Bean Burgers

I have made a bean burger or two in my day.  Most of my vegetable burgers consist of some type of bean, vegetables, oats or bread crumbs, a binder, and seasonings.  This time, my vegetable burger was a bit different.  These bean burgers had a deliciously crunchy and crispy texture, all thanks to…tortilla chips!  Who knew that chips could be so tasty in burger form?  Heck, who am I kidding?  Chips are almost always delicious, right? 😉

Spicy Tortilla Chip Bean Burgers

Adapted from this recipe.

Servings: Makes 4 burgers

Ingredients

olive oil cooking spray
1 15 oz can black beans, drained and rinsed
1 bunch green onions, roughly chopped
1/2 small red bell pepper, roughly chopped
1/2 cup spicy tortilla chips*, crushed
1/3 cup salsa (I used a combination of traditional medium salsa and salsa verde)
fine sea salt**
black pepper**
garlic powder**
onion powder**
4 whole wheat buns, optional
desired burger toppings, optional

*I used these chips:

I chose these chips because they came in the perfect-sized individual serving bag, they sounded deeeelicious (they are!), and they had a great ingredients list:

**I did not measure the amount of seasonings that I used.  Instead, I just tossed in a few sprinkles of each.

Directions

1. Heat oven to 375 degrees F.  Spray a baking sheet with olive oil cooking spray.

2. Dice the green onions and red peppers very finely, or process in a food processor.

3. Smash the beans with a fork until they are mostly mashed but a few whole beans remain in tact.  Stir in onion and red pepper mixture, salsa, chips, and seasonings.

4. Separate the burger mixture into four equal portions.  Form into the shape of burger patties.  The mixture will be quite liquidy, so this will be messy!

5. Bake the burgers for approximately 20 minutes.  Carefully flip the burgers and continue cooking an additional 15 to 20 minutes, or until both sides of the burgers are golden and slightly crispy.  You may need to cook them a bit longer, depending on the desired texture that you are trying to reach.

Serve the burgers on buns with your favorite toppings (avocado would be awesome!), or eat them bun-less like I did.

No matter how you serve the burgers, at least ensure that you serve them alongside your favorite veggie.  I chose one of my favorites: roasted brussel sprouts!

Happy Tuesday, everyone!  Tuesday is my least favorite day of the week, so let’s hope it is a good/quick one!

Omg I am loving veggie burgers lately...and this looks wonderful! I'm thinking maybe subbing zucchini or something for the peppers?

I definitely agree that chips are delicious in any and all forms, especially tortilla chips! Never would of thought to use them in burgers though! I love that you added salsa to them too - you could have called these chips and salsa burgers. ;)

Genius addition to the veggie burger!! I remember as a kid, I always stuffed ruffles potato chips in my sandwiches and burgers..... love that crunch!
    • cleaneatingveggiegirl August 6, 2013, 1:05 pm
The crunch is the best! You def need to add some chips the next time you make veggie burgers!

I love the idea of using chips for added crunch ansd flavor! Kind of reminds me of when I used to put potato chips on my PB&J when I was little :)
    • cleaneatingveggiegirl August 6, 2013, 1:06 pm
YUM! The crunchy texture is quite fantastic. And I never put chips on my pb & j's, but now I really want to try it!

Awesome idea! I usually use bread crumbs in my veggie burgers, but this sounds delicious. And a good way to use up extra tortilla chips. There's always less guac than chips! Haha
  • Alex @ Cookie Dough Katzen August 6, 2013, 10:50 am
Oh I bet the tortilla chips really make the burgers. These look great!
  • Sam @ Better With Sprinkles August 6, 2013, 10:54 am
Using tortilla chips in burgers is pretty brilliant! Will definitely have to try that out, so cool!
  • Kelly @ hidden fruits and veggies August 6, 2013, 11:26 am
I have terrible luck making veggie burgers, but these sound too good to resist!
    • cleaneatingveggiegirl August 6, 2013, 1:08 pm
The hardest part is always forming them and making them stay together. I think that is why I bake them instead of trying to cook them on the stove top.
  • MegBek August 6, 2013, 11:53 am
Yummy, I bet chips are SUPER good in those burgers! And Brussels go with everything, ha! :)
  • Ashlee@HisnHers August 6, 2013, 12:58 pm
    YUM! Thats a great idea!
  • Brynn August 6, 2013, 1:15 pm
I have a similar recipe, but it does not have crushed tortilla chips. Yum! I will add those in next time I makes these. Homemade veggie burgers are so good and easy to make.
    • cleaneatingveggiegirl August 6, 2013, 1:59 pm
Homemade veggie burgers are the best! I love actually know what ingredients are in them! Let me know if you try adding in chips :).
  • blonde hair blue eyed runner August 6, 2013, 1:31 pm
Wow, I had no idea you could make burgers with chips or beans. It's just never crossed my mind, but I love chips on my sandwiches so I've gotta try these!
    • cleaneatingveggiegirl August 6, 2013, 2:00 pm
If you like them on your sandwiches then you would almost definitely like them IN your burgers!
  • Becky @ Olives n Wine August 6, 2013, 2:26 pm
I love that you put chips in these!! This is my kind of burger :)

What a great idea! I have never thought of that but love having some texture in veggie burgers. Also since when are you going to Healthy Living Summit? Did I just miss that somehow? Well regardless I am excited since I will be there too !
  • Julie @ food fitness & happiness August 6, 2013, 5:37 pm
Omg how did I not discover your blog before? ;) Love it! These burgers look yumm-o! It's funny because I was thinking to myself, not later than this morning, that I really should try to make my own meatless burgers one day! I guess that day has come ;)
    • cleaneatingveggiegirl August 6, 2013, 8:10 pm
Oh, you should definitely give them a try! And thank you for stopping by! Don't be a stranger :).
  • Nicole @ FruitnFitness August 6, 2013, 6:16 pm
I love veggie/bean burgers and this sounds like such a creative way to make them. I always have a problem keeping mine together and end up with somewhat of a mess of a burger but even then they still taste good.
    • cleaneatingveggiegirl August 6, 2013, 8:10 pm
Keeping them together is definitely the hardest part! That is probably why I normally bake mine instead of cooking them on the stove top.
  • Meghan@CleanEatsFastFeets August 6, 2013, 7:10 pm
I love the addition of the chips. Genius.
  • angela @ another bite please August 6, 2013, 9:01 pm
