Guest Post: Peach, Tomato, and Caramelized Onion Pizza

Hi Guys, I’m Casey and I blog over at Salted Plates. I have been a fan of Hannah’s for a while and I enjoy all her comments on my posts as well. I am a life long vegetarian who enjoys experimenting with foods and making pizzas with my homegrown and csa produce.

Pizza of Peaches, Tomatoes, Caramelized Onions & Cheese

Today’s recipe uses two ingredients that are super fresh right now so I suggest you make it soon. Nothing compares to fresh peaches and tomatoes and if you can find local ones where you are I promise they will taste even better.

You can make this pizza completely from scratch or just buy your dough at the local supermarket. I tend to make my pizza dough in big batches which I store in the freezer and then put in to the fridge to defrost overnight. You also do not have to use a pizza stone, although I have been much happier with my pizzas since I’ve had one. You can definitely line a baking sheet with some parchment and bake the pizza that way. Your crust might not be as crispy but it will still taste great.

Pizza of Peaches, Tomatoes, Caramelized Onions & Cheese

8 slices

  • 1 1lb Pizza Dough, homemade or store-bought
  • 2 Tablespoons cornmeal for pizza stone
  • 1/2 pint of cherry tomatoes
  • 1 peach
  • 1 Tablespoon balsamic vinegar
  • 4 oz fresh mozzarella, thinly sliced
  • 3 Tablespoons blue cheese crumbles
  • 1/3 cup caramelized onions
  1. Preheat your oven to 450° and place pizza stone inside.
  2. While it heats allow your dough to come to room temperature.
  3. Chop the tomatoes into small pieces.
  4. Peel, pit and thinly slice the peach.
  5. When oven is preheated, roll out the dough to about 12″. I like my pizza thin so I try to make it almost as big as my pizza stone.
  6. Remove stone from oven and dust with cornmeal.
  7. Transfer dough to stone and brush balsamic vinegar over it.
  8. Top with chopped tomatoes, then arrange peach slices over dough.
  9. Top with cheeses, tearing mozzarella so it’s not in big pieces.
  10. Finish topping with caramelized onions, doing your best to separate and spread evenly.
  11. Bake for 10-12 minutes, until the dough has reached the desired level of crispy and cheese is melted.
  12. Remove from oven, slice and enjoy!

Thank you Casey for guest posting!!  Casey has many creative pizzas on her blog that I cannot wait to try.  This one is no different.  I have had pineapple on my pizza (and loved it), but have never tried peaches.  I can bet that the sweetness of the peaches is delicious, too!

      I've also made a similar peach caprese salad. If you have flavorful peaches, it is divine!

    Yum! The best pizza I've ever made was a peach, prosciutto, goat cheese and rosemary pizza using fresh farmer's market produce. I love this idea for a veggie spin on it!
