Mexican Cauliflower “Rice” with Vegan Sausage

*Adapted from this recipe for Spanish cauliflower “rice”

Here I go again with my cauliflower “rice” obsession.  What can I say, I just love it!  Hopefully you all have given it a try by now and are as excited as I am about all of the possibilities for using it in your dinnertime meals.  And if you haven’t tried it?  Well, you better get to processing and microwaving because you are SO missing out! 😉

1 small head of cauliflower, chopped
water, for cooking
2 cloves garlic, minced
1/4 yellow onion, diced
1/4 red bell pepper, diced
1 link vegan Mexican “sausage,” sliced*
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp chili powder
1/4 tsp cumin
black pepper, to taste
1 cup chunky salsa (I used medium)

Mexican cauliflower rice*I used the Mexican Chipotle flavor of Field Roast brand vegan “sausages.”  P.S., I will never ever stop professing my love for this company!

Directions

1. Process the head of cauliflower in two batches in your food processor until it resembles the texture of rice.  Place the cauliflower “rice” in a microwave-safe bowl and heat for 4 minutes.  Stir, and continue to microwave for 3 to 4 additional minutes.

2. While the cauliflower is cooking, line a large skillet with a thin layer of water.  Heat over medium-high heat, or until very hot.  Once hot, lower the heat to medium and add garlic, onions, and peppers to the skillet.  Cook the vegetables for 6-8 minutes, or until softened.  Add additional water, as necessary.

3. Stir in the slices of “sausage.”  Cook an additional 5 minutes, or until heated through.

4. Add cooked cauliflower “rice,” seasonings, and salsa to the skillet.  Stir until well-combined.  Heat for an additional 3 to 5 minutes, or until warm.

5. Serve.

Mexican cauliflower rice 8yI served my Mexican Cauliflower “Rice” with Vegan Sausage on its own, but I can only imagine how delicious this would taste scooped up with tortilla chips!

Mexican cauliflower rice 5 editedOne of the things that I love about cooking with cauliflower “rice” is that you can eat a TON of it for a lot fewer calories than rice and you get in a great serving of veggies.  Plus, it tastes delicious, especially when seasoned well.  The spicy seasonings in this dish combined with the salsa really did the trick.  And that vegan sausage?  I cannot wait to cook with that again.  It is definitely spicy and definitely delicious!  If you have never tried cauliflower “rice” or the Field Roast sausages, this is a dish you really must make.  And that is an order! 😉

    I just tried cauliflower for the first time a couple weeks ago and was surprised by how much I liked it. This recipe looks/sounds delicious!

    I NEED to make this rice! YUMMMM I have been slacking sooo hard on making cauliflower rice. I am so sad to say that I don't eat Field Roast much these days because it makes me sooo bloated and gassy..wahh!

    I really have been wanting to try those Field Roast sausages, but they're pricier than tofurkey and that's why I usually get those instead. Maybe next time I'll just bite the bullet and get them!!

      They are pricey, but SO worth it!! The apple and sage flavor is by far my favorite. You MUST try them! ;)

    I love love love love love (X1,000,000) field roast. I spent a solid 2 years walking right by it in the freezer because I didnt realize it was vegan, and I'd really like those 2 years back! This looks great, Hannah. Enjoy your weekend with your fam.

    Bookmarked! I always wanted to try cauliflower as rice and love anything Mexican so I will have to whip some of this up. I might substitute the sausage for chorizo, I'm so excited! Maybe I will surprise my rice-loving boyfriend and see what he thinks of eating veggies instead of refined carbs. :)

    Okay, I've never tried Field Roast but I'm dying to! And though cauli rice kind of makes a mess, it's definitely worth it since you can eat TONS! Looks fab :)

      Well, you know how we both are IN LOVE with the apple and sage flavor...so I wouldn't say that it is AS good, but it is still really good. It's definitely spicy, so it would be great with anything Mexican-themed!

    I can't believe I stiiilll haven't tried cauliflower rice! And now I'm at school and don't have access to a food processor... winter break for sure though! Hold me to it ;)

      Aww man, what a bummer!! Maybe you could buy a mini food processor. It would take a bit longer (and it is kind of messy to make), but it could work!

    I live right on the border of Mexico, so a healthier approach to Mexican Rice is so cool to me! I've been slowly trying to eat more and more vegan foods, but living near Mexico makes this SO hard. Seriously, we love our meat down here, but your blog makes it so much easier! I love the idea of cauliflower rice! YUM!

    Cauliflower rice is so good. I've been all about mexican/southwestern dishes lately. I got some baked BBQ chickpeas that I've been mixing with quinoa, corn, black beans, salsa, asparagus and mozz. cheese.
