Mexican breakfast toast 3Hey y’all!  I hope that your Labor Day weekend has been off to a fabulous start.  I have been enjoying spending time with my family, friends, and doggies, and am already getting a bit sad about the idea of leaving home again tomorrow.  ‘Tis life, though, right?  Since I don’t want to spend too much of my weekend connected to technology, I am going to keep this short and sweet.  Here is a super tasty breakfast recipe with a Mexican twist.

Mexican Breakfast Toast

Servings: 1

Ingredients

1 egg
2 pieces whole wheat bead
1/4 cup vegetarian refried beans (perfect for when you have leftovers from a recipe- which I always do!)
1/2 avocado, smashed
fine sea salt, to taste
2 TB salsa

Directions

1. Cook one egg sunny-side up.

2. While the egg is cooking, prep the avocado and heat the refried beans.

3. Toast the bread.

4. Compile your Mexican Breakfast Toast in the following order: toasted bread, refried beans, smashed avocado, sea salt, salsa, and sunny-side up egg (the most important part!)

Mexican breakfast toast 4y editedIt is no secret that the combination of toast, avocado, and eggs is a huge favorite of mine, especially for breakfast.  In fact, it just may be my all-time favorite breakfast to munch on.  This Mexican Breakfast Toast really puts that combo over the edge with the added refried beans and salsa.  This is one combination that you do not want to miss out on.  Mexican food is good anytime of the day, right?  So why not enjoy it for breakfast?  Of course, this would also make for the perfect lunch or dinner, too!

    I love, love, love simple breakfast treats! Although I'm more of a sweet kind of gal in the morning, I certainly leave room for the savory sometime in the afternoon :)

    Perfect brunch in my mind - though I typically go for black beans instead of guac (for some reason I cannot stand avocados!)

    I am not usually a fan of savory breakfasts unless it's an omelette... although I do remember when I went through a weird breakfast burrito craze a few years ago. I would definitely use this for lunch though!

      They were a really nice addition. Plus, I never know what to do with my leftover refried beans, so this is perfect!

    You are on a Mexican kick and I love it! Living in California throughout my life has made me really needy on Mexican and I can't go a few days without it. Add a runny egg on top and baby, we got a perfect meal going!

    This is such a great idea! Love mexican food and breakfast, hadn't thought to combine the two. I love avo and egg on toast so i'm sure the beans would be a great and filling addition.

    MMM this looks so amazing! I LOVE sunny side up eggs. I used to call them dippy eggs when I was younger and would always beg my parents to make DIPPY EGGGGS (whiny voice- haha.)
