Guacamole Egg Salad

I have been spending this wonderful weekend with my favorite guy in my life:

He is in town to run the Omaha Marathon…and to see me, of course! 😉  I don’t want to spend too much time blogging/with technology this weekend, so I am just dropping by to share a quick and delicious Summertime recipe, even though it is technically the first day of Fall.  Heck, I plan on eating this one year round!

Servings: 2

Ingredients

6 hard-boiled eggwhites (you can use the whole egg, but I don’t like hard-boiled yolks), chopped
1 ripe avocado, smashed
juice of 1 small lime
1 small tomato, chopped
1/4 red onion, diced
1/4 tsp garlic powder
1/4 tsp onion powder
sea salt, to taste
Romaine lettuce OR four pieces of whole wheat bread (toasted)
salsa, optional

Directions

I hope these directions aren’t too difficult to comprehend ;).

1. Place all ingredients into a medium bowl.

2. Stir until well-combined.

3. Store covered in your refrigerator for up to 3 to 4 days.

4. Once chilled, serve in sandwich form or over a bed a lettuce.  Top with salsa, if desired.

guacamole egg saladI have recently been obsessed with all things “egg salad” related…add in some avocado and I am extra happy!

guacamole egg salad 9I ate my second serving of the salad in sandwich form on break at work the next day (hence the gorgeous paper plate).  I loved it served between two slices of toasted whole wheat bread.  I left off the salsa this time, but it was just as good!

guacamole egg salad 7I love a salad that I can enjoy in multiple ways.  This, my friends, is a good one.

    Hardboiled egg yolks freak me out! They're so dry and chalky. I love anything with avocado, too!

    I got really into making guac egg salad last year! So tasty and a great alternative to normal egg salad. I also mix my guac with tuna sometimes!

      Great minds think alike! ;) That was my original plan, but the hearts of Romaine were not looking so pretty..so I just went with already chopped up Romaine.

    I used to not be able to eat hard boiled eggs at all but lately can't get enough! I even eat them plain now! So weird! I hate mayo so if I make egg salad or tuna salad I use avocados. So good!

      I don't like mayo either, so using avocado is the perfect solution! I do, however, love vegan "mayo." Weird? ;)

    Aww, you and your dad look GREAT in that photo! Hope the marathon went well for him :) I love using guac in place of mayo, especially with shrimp salad so I'm sure this egg salad version would be a hit. Happy Monday!

    I love that your dad is there to run a marathon! I would say you have a pretty cool dad. This avocado and egg salad sounds great! I think it's funny I love the runny yolk of fried eggs but don't like the hard boiled egg yolk at all.

    Holy moly your dad is lightening fast!! That's incredible time for a marathon. Your lentil based Philly Cheesesteak looked out of this world good! You should recreate that one!! All of your food looked incredible. I'm the same way when I order a veggie platter for dinner. I have to load up on bread too!
