WIAW: October 16, 2013

Welp folks, we are almost halfway through the work week and I could not be more excited.  I don’t know about you, but I am just not feeling this week.  The weekend needs to get here and it needs to get here ASAP!  But while we are waiting on Friday at 5:00 (or actually 12:00 for me!), let’s take a peek at some of my recent eats.  Today’s eats actually feature my food from last week, but since the blog was undergoing some serious maintenance, I wasn’t able to share them until this week.  Better late than never, right?

Breakfast

Before I went into work I ate three scrambled eggwhites topped with mango salsa.  Sorry there isn’t a picture, but I guess I just wasn’t quite awake enough to remember ;).

WIAW 10913At work I ate the second part of my breakfast, what I am calling apple spice overnight oats.  Basically this was a mixture of cocoa overnight oats, homemade applesauce, puffed kamut cereal, and raisins.  Um, this was insanely good and will definitely be making more appearances.

Snack

Lunch

WIAW 10913 2Lunch was a bowl of my butternut squash and apple chili (recipe to come!) that I cooked in my slow cooker over the weekend.  I stirred in some leftover cauliflower rice to thicken it up.

Snacks

WIAW 10913 3I am addicted to this combination right now: two wasa crackers, Tofutti herb and chive vegan cream cheese, sliced tomatoes, and sea salt.  Ahhmazing.

I also snacked on some celery and peanut butter, and I ate an apple when I got home from work.

Dinner

Dinner was an unbelievably tasty grilled cheese sandwich (more on this in a future post!).  And no…that is not meat ;).

collard greens

I also ate collared greens that I sauteed in a little bit of vegetable broth with garlic and onions, and seasoned with sea salt, black pepper, and a little bit of garam masala.

Snacks

The evening ended with some of my favorite (probably boring by now? ;)) snacks:

…and one of my current favorite snacks: air-popped popcorn!

    Yum - everything sounds delicious. I can't wait to see that apple and butternut squash chili recipe. Popcorn has become one of my favorite snacks lately too.     Butternut and apple chill?! That sounds like an -amazing- combination... And you can never go wrong with grilled cheese -- that's like the perfect quick comfort food.

    So many delicious eats there!! Can’t wait for your grilled cheese recipe, it looks and sounds delicious! Nothing wrong with sticking to snacks that are the same if they taste good! The week has gone slow for me but don’t hate me today is my last working day of the week before my boyfriend and I go away for a few days!

    All of your food looks amazing, but your breakfast looks so good to me. I've been loving just putting tons of random things in a bowl and eating them for breakfast, so I'm loving your breakfast!       Yes! The "hodge podge" breakfasts are often the best! And thank goodness for apples, huh? They make for one of the best snacks. There is rarely a day that goes by that I don't eat one.

    Lunch looks amazing! I can't wait for the recipe. I love all squash and chili is just perfect for cold days! The collard greens sound like they might be good too! I love the pickled greens served at a local japanese restaurant but I'm usually not a fan of others because they can be really mushy and slimy. These don't look over cooked at all!       You should definitely try sauteed collared greens or spinach...I LOVE them, especially when they are properly seasoned.

    I'm really looking forward to that apple chili recipe. I recently saw one on another blog and was interested.... I've never had apple in my chili.     I'm dying to know what's in the special grilled cheese. While I absolutely LOVE a traditional one (ultimate comfort food), I like adding random-but-delicious ingredients, too. That chili sounds so interesting, too. Might have to try it once the weather really cools down here.     Air popped popcorn with cinnamon or nutritional yeast used to be one of my favorite late night snacks, I don't know why I stopped having it as often! And I love the garam masala you aded to your collards, I swear that stuff tastes good on anything. I am definitely looking forward to the weekend too, and by now we are almost there!

      Air-popped popcorn is my fave!! I definitely need to try it topped with cinnamon. And isn't garam masala absolutely awesome? I think I could add that stuff to anything ;).

      I hear ya! I LOVE soup. In fact, I love it so much that I even make it during the Summertime ;). And yes, some bread on the side makes it even better. In fact, I am especially quite fond of bread bowls.

    Oatmeal and cereal go awesome together don't they?! I love adding a little extra crunch to my oats :) I also can't wait for this squash and apple chili! Those 2 are another match made in food heaven ;)

      Yes, I ALWAYS add some cereal into my oats. It bulks them up and gives them great flavor and texture. It is pretty much a must in my book ;).

    Hi, I just stumbled across your blog and your meals look awesome. I am vegetarian and was looking for examples of non-processed, low sugar, low dairy meals. I noticed you do a lot of cardio and I was wondering if you are losing weight eating this way, or do you count calories at all?
