It’s Wednesday!  You know what that means…a full day of my super fabulous, entertaining, unique, and amazing eats.  Okay, so those adjectives may not be true, but let’s go with it! 😉

What I Ate Wednesday Monday

Breakfast

Breakfast #1 before I headed into work was three microwaved eggwhites (with some hot sauce mixed in) all topped off with mango salsa.

Breakfast # 2 (eaten at work) was a big ole bowl of Pumpkin Cocoa Overnight Oats.  Look for the recipe tomorrow!

Snack

Mid-morning I ate celery with red pepper hummus dip.  Pretend that is hummus in the picture.  I was a bad blogger and forgot to take a picture! 🙁

Lunch

friday favorite butternut curry lentils

Lunch was leftovers from Sunday nights dinner: Butternut Squash and Lentil Curry Stew over cauliflower “rice” (more on this in a future Friday Foodie Favorites post).  It doesn’t look pretty, but it sure was tasty!

Snacks

My first afternoon snack consisted of whole roasted and salted almonds and raisins.  I love this combo!

I have been trying to up my water intake, so I drank a peach-pear La Croix sparkling water.  I am not entirely sold on this flavor, but I still enjoyed it more than drinking plain water.

I also snacked on an apple when I got home from work.  I rarely ever go a day without an apple!

Dinner

Dinner was The Happy Herbivore’s mock “tuna” salad on two pieces of toasted Ezekiel bread with lettuce.  This sandwich is SO good!  On the side I ate a dill pickle…

…and some cooked green beans.  These sure look pretty sad, huh? 🙁

Snacks

My evening snacks include carrots and cucumber slices with hummus (sorry no picture, but you’ve seen it all before!)…

…fresh strawberries and red grapes (I am obsessed with these babies right now!)…

…and a baked sweet potato (microwaved, actually) topped off with Justin’s maple almond butter.  I am telling you right now, this almond butter was sent from heaven.  I am in love!

    I'm legit always so blown away by how many fruits and veggies you can pack into a day. You're a model fruit and veg citizen! Can't wait for that pumpkin cocoa overnight oats recipe...I have WAY too much pumpkin sitting in the fridge. There are so many amazing recipes that it's hard to pick one!       Haha, thanks! ;) I sure try my best. And I hear you on the pumpkin. I have been getting SUPER overwhelmed by all of the millions of pumpkin recipes I want to make. I decided this month that I am officially going to start eating pumpkin year round.

      Haha, I know...right?? I don't know what I was thinking!! ;) Actually..my bananas weren't ripe enough. I was very sad :(.

    :lol: I love your obsession with Justin's... and you know I can totally relate ;) And I don't think I ever go a day without an apple either. Between applesauce, apple chips, and plain apples, I probably eat at least 2 a day.

      Isn't it amazing? I really cannot get over how tasty it is. You definitely need to top a sweet potato with it. That has been my "go to" dessert at night lately.

      Isn't it crazy?? All of my bananas weren't ripe enough. It was super disappointing :(. Thanks for the recs on the La Croix flavors..I love the grapefruit but haven't tried the coconut yet!

      The truth is..you can!! :) I NEVER used to eat this healthy and thought I hated most vegetables. If you give everything a try multiple times, your tastebuds should come around!

    Am I a bad blogger admitting that I'm still not fond of sweet potatoes? But hey, I'd totally take Justin's maple almond butter if it was available over here ;). Your lunch looks and sounds like Pinch of Yum's Kabocha Squash Lentil Stew which is super delicious and coincidentially was my lunch today. It wouldn't have won a prize for looks but who cares if it tastes amazing?!

    that lentil lunch looks amazing! i love the addition of butternut squash. the mango salsa on the eggs sounds great too. i love salsa on eggs but have never done a fruity salsa. great idea! sometimes there's nothin better for dinner than a sandwich with a pickle on the side.     Sweet potatoes with nut butter is one of my favorites! Try adding coconut and cinnamon if you're into that. So good :)

      Yes!!! I have added cinnamon before and LOVED it! It is amazing what you can do with a sweet potato.
