Pizza for Breakfast: Breakfast Pizza Egg-Scramble Burrito

I don’t know about you, but one of the best ways to eat leftover pizza is for breakfast.  I remember doing this quite frequently growing up, especially during my college years.  And yes, I ate the leftover pizza cold, of course!  A few mornings ago I decided to combine my love for breakfast food and pizza by making a much healthier version of “pizza for breakfast.”  The result…

…what I like to call a: Breakfast Pizza Egg-Scramble Burrito

 

 

 

 

 

 

 

 

 

 

Ingredients

1 whole wheat wrap (I used a Flat Out wrap)
4 egg whites
hot sauce, to taste
black pepper, a few sprinkles
EVOO cooking spray
2 TB of yellow onion, diced
2 TB of tomatoes, chopped
1 to 2 handfuls of fresh spinach, chopped
1 Weight Watchers or Laughing Cow cheese wedge OR shredded part-skim cheese
pizza sauce (desired amount)
pizza seasoning (optional)
nutritional yeast (optional)
…and any additional “pizza” toppings that you like!

Directions

1. Preheat oven to 350 degrees F.  Spray a small saute pan with EVOO cooking spray

2. Cook onions, tomatoes, spinach, and any additional toppings over medium heat in EVOO sprayed pan.  Cook until the vegetables are tender and the spinach is mostly wilted.

 

 

 

 

 

 

 

 

 

 

3. Combine and whisk egg whites, hot sauce, and black pepper.  Add to vegetable mixture and cook over medium heat until the eggs are scrambled.  While the eggs are cooking, bake the wrap for approximately 3 minutes on a lightly sprayed baking sheet until it is just slightly crispy.

 

 

 

 

 

 

4. Spread cheese wedge or sprinkle shredded cheese onto warm wrap, top with scrambled egg white and veggie mixture, drizzle with pizza sauce (this is a perfect example of why I love pizza sauce that comes in a squeeze bottle!), and top with pizza seasoning, pepper, and/or nutritional yeast, if desired.

 

 

 

 

 

 

5. Wrap up into a burrito and eat!

 

 

 

 

 

 

 

This is a much healthier version of “pizza for breakfast,” it provides you with an early-morning serving of vegetables, and it is protein-packed with approximately 23 grams of protein.  Plus, it is quite delicious!  Now go enjoy some healthy “pizza” for breakfast…or lunch..or dinner! 😉
